{"id":77,"date":"2017-10-19T23:34:35","date_gmt":"2017-10-19T23:34:35","guid":{"rendered":"http:\/\/drkarenhudes.ca\/?p=77"},"modified":"2017-10-20T12:57:01","modified_gmt":"2017-10-20T12:57:01","slug":"thai-coconut-squash-soup-gf","status":"publish","type":"post","link":"https:\/\/drkarenhudes.ca\/index.php\/2017\/10\/19\/thai-coconut-squash-soup-gf\/","title":{"rendered":"Thai Coconut-Squash Soup (GF)"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-79 aligncenter\" src=\"http:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image7-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image7-300x225.jpg 300w, https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image7.jpg 320w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>I can&#8217;t help it &#8211; still just back from that amazing Womens retreat at Thirteen moons and had to try this amazing recipe &#8211; This one is gluten free and so tasty I can&#8217;t stand it.<\/p>\n<p>My husband even liked it but he did say he thought something was a bit &#8220;off&#8221;.<\/p>\n<p>Ok so admittedly I added the cilantro and he hates cilantro&#8230; yes he is one of those of the world to whom cilantro tastes like soap (more soup for me!)<\/p>\n<p>While at Thirteen Moons we had a little &#8220;Cilantro Miracle&#8221; &#8211; Apparently Louise had never had a group of women who all liked cilantro before &#8211; there were 7 of us.<\/p>\n<p>So anyways, you can leave the cilantro out if you like but wow I love it so in it went&#8230; super easy and so so tasty&#8230;. I get this again for lunch tomorrow too &#8211; yay!!!<\/p>\n<p>Here is the recipe (with permission):<\/p>\n<p>Thai Coconut-Squash Soup<\/p>\n<p>4 cups vegetable stock<\/p>\n<p>4 cups cubed butternut squash<\/p>\n<p>1 tablespoon coconut oil<\/p>\n<p>1 lb brown mushrooms thinly sliced<\/p>\n<p>1 red bell pepper diced<\/p>\n<p>1 small onion diced<\/p>\n<p>1 tablespoon finely minced chili pepper (optional)<\/p>\n<p>1 clove garlic finely chopped<\/p>\n<p>2 teaspoons grated ginger<\/p>\n<p>1 can coconut milk<\/p>\n<p>juice from 1 lime<\/p>\n<p>&nbsp;<\/p>\n<p>Put the stock and squash in a soup pot and bring to a boil. Reduce to a simmer, covered until the squash is tender, about 20 minutes.<\/p>\n<p>While the squash is cooking, heat the oil in a skillet over medium heat and add the mushrooms, bell pepper, onion, chili pepper, garlic and ginger and saut\u00e9 until the vegetables are slightly wilted &#8211; 5-10 minutes<\/p>\n<p>Once the squash is tender, add the mushroom mixture to the soup pot and stir in the cilantro.
