{"id":204,"date":"2017-12-03T09:00:19","date_gmt":"2017-12-03T09:00:19","guid":{"rendered":"http:\/\/drkarenhudes.ca\/?p=204"},"modified":"2017-11-19T12:02:46","modified_gmt":"2017-11-19T12:02:46","slug":"hot-quinoa-and-spinach-salad","status":"publish","type":"post","link":"https:\/\/drkarenhudes.ca\/index.php\/2017\/12\/03\/hot-quinoa-and-spinach-salad\/","title":{"rendered":"Hot Quinoa and Spinach Salad"},"content":{"rendered":"<p>Ok, so here is one that I totally made up.\u00a0 I love it and make it for lunch lots but you may hate it so if so sorry!!!\u00a0 I never do this make up your own recipe thing.\u00a0 This one came about because I was looking for something yummy yet healthy to make that still tasted like comfort food.\u00a0 For me this one does it.\u00a0 Also was limited to what I had in the kitchen, and frankly the large box of baby spinach was looking like it was going to go off soon so in it went.\u00a0 You can eat this as a side but I usually make it my whole meal for a few days in the week when I make this recipe.\u00a0 I can get three lunches for me out of the recipe &#8211; of course the hubby and child wont go anywhere near it. Its way WAY too green.\u00a0 Full of Calcium, protein and other amazing stuff&#8230;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-199\" src=\"http:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/11\/image1-6-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/11\/image1-6-225x300.jpg 225w, https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/11\/image1-6.jpg 240w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>So here is the Recipe:<\/p>\n<p>1 cup uncooked quinoa<\/p>\n<p>2 cups of water<\/p>\n<p>1 large box of fresh baby spinach<\/p>\n<p>1-2 chicken breast or even better: left over roasted chicken from grocery store\/Costco<\/p>\n<p>1-2 avocados<\/p>\n<p>Siracha sauce for taste (I use rooster sauce)<\/p>\n<p>Salt to taste<\/p>\n<p>Cook quinoa in water according to directions and set aside.\u00a0 In a large bowl of a food processor puree all spinach, avocado and chicken and mix together well.\u00a0 Place quinoa and spinach\/chicken mixture into a large mixing bowl and mix together until uniform colour.\u00a0 Add Siracha sauce and\/or salt to taste.\u00a0 Serve warm &#8211; does well heating up in the microwave and will store for a few days in the fridge.
