This neutrient dense stew combines root veggies and all sorts of great stuff that is great for your bones and skeleton.<\/p>\n<p>Most importantly, it is delicious and easy.\u00a0 Granted it does take some time but the hardest part about it is chopping all of the root veggies that go in it.<\/p>\n<p>It is hearty and warm and delicious.\u00a0 It is another recipe from the wellness retreat called Thirteen moons.\u00a0\u00a0 I made a big pot and we will eat from it all week.\u00a0 Perfect for a grey cold day. Here is the recipe reproduced with permission.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-143\" src=\"http:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image1-4-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image1-4-300x225.jpg 300w, https:\/\/drkarenhudes.ca\/wp-content\/uploads\/2017\/10\/image1-4.jpg 320w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Strong Bone Stew<\/p>\n<p>Stew base:<\/p>\n<p>2 Tbsp olive oil or Ghee<\/p>\n<p>1 cup chopped onion<\/p>\n<p>1-3 cloves garlic<\/p>\n<p>4 cups vegetable stock<\/p>\n<p>1 cup quartered mushrooms<\/p>\n<p>4 cups root veggies (potatoes, sweet potatoes, carrots, turnips, parsnips or winter squash cubed)<\/p>\n<p>&nbsp;<\/p>\n<p>Sauce (make separately):<\/p>\n<p>1\/2 cup wakame seaweed<\/p>\n<p>2 Tbsp miso<\/p>\n<p>2 tsp tamari<\/p>\n<p>1\/3 cup tahini<\/p>\n<p>2 Thsp cup peanut or nut butter * there is an allergy in my house so I substituted wow butter and it tasted great.<\/p>\n<p>1Tbsp apple cider vinegar<\/p>\n<p>&nbsp;<\/p>\n<p>-In a large heavy bottomed pot heat ghee and add onion and garlic and saut\u00e9 until onion is soft.\u00a0 Add veggie stoc and bring to a boil.\u00a0 Add veggies and seaweed and simmer 45 minutes adding more water or broth if needed.<\/p>\n<p>While stew simmers mix together miso, tamari, tahini, nut butter and vinegar in a large measuring cup or bowl and set aside.<\/p>\n<p>Just before serving ladle enough hot broth into miso to make it thin enough to pour into stew.\u00a0 Add to stew.\u00a0 Continue to cook on low for 5 minutes.
